P226 gets my vote, it’ll probably be my next purchase too (SAO?).
A few people mentioned the 228, I’m a little ashamed to say I never knew about it until I joined this forum. In the beginning I thought it went 220, 226, 229.
Then again, I never knew about the P210 either but I fell in love with that really soon after joining here and finally got one this year.
For me it was the P220ST, P225, P228, P229 & P239SAS
Never had a P226
Today the M17/M18 P320 & P365
I have a P365XL Coming maybe on Thursday as the shop is closed tomorrow because of a death in the family
Tacpac 365XL with three magazines, holster & Romeo Zero for under $500, It was a no brainer

I overlook the plastic Sigs just like I overlook all the other "me too" plastic striker guns except for what I consider the original. No real reason except that there are too many plastic strikers to consider and for civilian self defense handgun, I prefer an external hammer that is not carried cocked with a stiffer trigger pull at least on the first shot. To me, Sig's plastic striker guns do not exist but as I alluded - if I were to give preference to a plastic striker firearm, it would be a Glock in certain circumstances.
As for the question asked by the OP, it would have to be the P226 with the P229 as the close slightly smaller option. To me, the P226-P229 sibling relationship is like the Glock 17/19 relationship.
When I was a younger man in the 90s I always thought the P226 was the Bee's Knees
Our local Police Department went to the P226 & I know the Chief who chose it as the winner in their trials
He even asked me & it was Glock 17 vs SIG P226 vs Beretta92FS & he chose the SIG Sauer P226
