So looking at the German website it looks like they make the P210 in several varieties. Is that accurate? What's MSR? How hard is it to get a pistol imported to the USA? Anyone know? Are there companies who do it?

From ATF Form 6:

3. A Federal firearms licensee other than an importer, may make an occasional
importation of sporting firearms or ammunition (excluding surplus military) for
himself or an unlicensed person in the licensee's State, provided that the firearms
and ammunition are intended for personal use of the person for whom imported
and not for resale. ATF Form 6 - Part I (5330.3A) is used to obtain approval for
such importation.

My understanding is that there are some FFLs that can/will import them but, for I guess legal reasons and supply issues from Germany, it's not that easy. I know Roco get's some in occasionally - https://www.rocosystems.com/sig-p-210
I dont know why it cant be a more regular flow and I know it will be considerably more expensive.
