As it appears you are looking for a private individual to "help you", then you probably know about this business... Peninsula Guns + Tactical - Home

Are they certified SIG Armorers on the P320 platform? I have no clue who they are.

I don't know for sure, but it might be worth a phone call. They are a Master Dealer according to Sig's website, which doesn't provide a list of Armorers. If they aren't, they should know who on the area is.
If you are mechanically inclined at all watch the YouTube videos and you can do it yourself. The 320 is easy to do after watching the video a couple of times. just Be careful and not tweak the spring is the hardest part.

The 320 is the easiest to work on especially just swapping triggers.

Excuse my ignorance, but why do you want to change your trigger?

The variety of triggers, allow the trigger to have a different feel. This allows the owner to customize the the gun, to suit the individual shooters preference.
